    I just made this low carb chicken gnocchi dupe that was excellent.

    This looks good. I've made a couple of the copycat Olive Garden gnocchi soups and I want one a little less rich/thick. Some of the broth to cream ratios are 1:1, I'm like WHAT. I'll have to try this one.

    Giada’s minestrone, except I like it with a sweet potato instead of a russet. Plus, it’s minestrone, so there’s endless room for adaptation. (Always keep the parmigiano-reggiano rind, though.)

    @Lh718 Do you have a recipe for the beef and barley soup or buy it? J loves barley in soup but I've never made anything with it.

    No recipe. I usually just get it if it's an option when we eat out or made by other peopl.

    Fair warning, the stuffed pepper soup makes a boat load. I halve the recipe and still freeze half of it, at least it freezes well.

    I have been unsuccessful thus far at finding the original recipe for it, but rooster's favorite soup is Black Bean Salsa soup and it's just a dump-stuff-in-the-crock-pot soup if you don't use dried beans.

    1 carton of broth
    2-3 cans of black beans
    1 can diced tomatoes
    1 jar salsa
    3 chicken breasts (I often omit these)

    Optional: can of jalapenos, can of corn

    Cook until the chicken is done.

    I've been digging tortellini soup lately, but I dont follow a recipe.

    Cook up 1lb ground chicken (or pull apart rotisserie chicken, or make and dice a breast, or totally omit meat, your call). Add whatever flavoring your like- i usually do salt, pepper, garlic, and Italian seasoning. Add to the pot.

    2 cartons of chicken or vegetable broth (or 1, if you dont want a whole pot of soup)
    Carrots
    Celery
    Can of diced tomatoes
    Canned or frozen corn
    I usually add some oregano, garlic powder and a couple bay leaves. I've had to omit oregano though because kids get grossed out my floaty bits of flavor :oops:

    Simmer until carrots are soft. At this point, you can add your tortellini to cook in the broth if you want, but I prefer to cook the tortellini separately and add it before serving.

    Turn off the heat and add baby spinach (or frozen or whatever you like. Kale and such would probably work too). Sprinkle with shredded parmesan, also optional.

    This is my new winter mantra—cook double, freeze! I make a lot of comfort food type stuff and eat leftovers but I often forget to help future me by freezing. I think I’m going to buy some of those little foil freezer pans to have on hand and I need some more of those twist top freezer Tupperware for soups.

    I never know what containers can actually go in the freezer... I want to make all the soups and veggie chilis!
